Cold picnic food recipes form the centerpiece for most picnics. In fact, unless you are certain that a barbeque pit will be available, plan on serving cold food, like the ones you will see at the bottom of our picnic pages.
There are a few gourmet items that must be served hot, like a souffle. And there are some things that don't travel too well, like scrambled eggs. But nearly everything else is fair game, and many foods are truly spectacular on picnics, such as:
SALADS. Potato salad is the staple, but there are lots of salads that you might pack. If it fits in a plastic bowl, consider it. Pasta salads, green salads, rice salads, tomato salads, even hearty salads like steak salads or stuffed avocado salads are great choices.
SANDWICHES. Everything from peanut butter and jelly, all the way up to gourmet sandwiches like the shrimp salad delight, below, are welcome here.
FRUITS AND VEGGIES. All kinds. Apples, berries, grapes, bananas, pears, cherries. Even pre-cut fresh pineapple is truly tasty on a romantic picnic. As for veggies, try an artichoke (see our recipe!), cut veggie medley or creative veggie salads.
DESSERTS. Cold picnics naturally include cookies, fruit bars and tarts.
OTHER MUNCHIES. Chips and dips of all kinds are welcome munchies, as are nuts and trail mix.
DRINKS. Wine, of course. Also maybe a spritzer. Or a beer (if your cooler keeps it cool enough). Sodas or lemonade. Be sure to bring an opener for the drinks, whatever you choose.

Shrimp Salad Delight
You can make this a day ahead. On the day of the picnic, take the shrimp in a container and make the sandwiches just before eating. Be sure to keep your picnic basket out of direct sunlight.
You will need:
Fill a large pot with water and bring it to a boil. Add shrimp and cook them for about two minutes. It doesn't take long. Drain with a colander and run cold water over them -- that stops the cooking. When the shrimp have cooled, peel them and devein them if needed. Chop the shrimp into 1/4 inch pieces.
In a large bowl combine the celery, mayonnaise, chives, tarragon, lemon juice and shrimp. Season with salt and pepper to taste. Cover the bowl and chill it.
When you are ready to eat, cut your bread longways in half and fill with the shrimp. A pure delight!
