I am a great believer in using modern conveniences, even pre-prepared foods. For example, the salad green mixes that I get at the store are far nicer than what I could do. I would end up buying six different kinds of lettuce, washing and tearing it all up. Not only would it take more time, but I would probably end up wasting half of it.
So here are some ideas for serving some great and easy picnic recipes.
Use Some Prepared Foods. The lettuce packages, yes. Salad dressings, yes. Seasonings that are pre-measured, like "chicken seasoning" and "steak spices", yes. Breads, yes. There is no reason to make all these things from scratch unless you especially enjoy doing it.
Choose Foods That Are Eaten Un-cooked. All kinds of fruits and vegetables fit into this category. Apples, pears, grapes, nuts, trail mix, carrots, celery, broccoli. Wander through the fruit and veggie section of a nice store and you will get more ideas than you can use.
Serve Basic Foods Without Sauces Or Fancy Seasoning. A good piece of chicken is a good piece of chicken. It certainly doesn't need a fancy sauce for a picnic. I am not fond of pre-cooked chicken. It is just too salty for us. So I bake some chicken breasts for our picnic the night before, seasoned with pepper and Mrs. Dash's chicken seasoning.
Keep The Picnic Simple. Truly, food is NOT the primary reason for a picnic. The moments that you and your honey spend together are far more important than anything you could fix.

Gourmet Salmon Salad
You can cook the salmon a day ahead if you like. Toss the other ingredients together before you leave on the picnic. Put the vinaigrette dressing in a small jar, and sprinkle it over the salad just before you serve it. It is truly a gourmet meal, and is so easy to make!

To Cook the Salmon:
Wash the fresh salmon and pat it dry with paper towel. Sprinkle the Cajun spices and the dill seasoning on it. Get a frying pan and very lightly spray oil in it, adding the lemon juice. Cook the salmon over medium heat for about 5-6 minutes, then turn it over. Cook another 5-6 minutes. It is done when the salmon meat comes apart easily with a fork. It is fine if it looks charred on the outside -- that gives it a bit more flavor.
Take it out of the pan and let it cool, overnight if you like.
To Fix the Salad:
Combine the lettuce, tomatoes and capers in a plastic bowl. Toss. Tear the salmon into chunks and sprinkle it over the greens. Cover and take it to your picnic. Just before eating, drizzle the vinaigrette dressing over it. It looks -- and tastes -- like a true gourmet meal, and you put it together in just minutes!
