Here is one of our favorite picnic food ideas: French Style Potato Salad, perfect for lunches and dinners!
French Style Potato Salad
If you like, make this a day ahead of time and give the spices time to blend together.
You will need:
To cook the potatoes:
Scrub them. Leaving them unpeeled, put them into a pot of boiling water. Cook about 20-30 minutes. They are done when a fork can be inserted easily. Drain the water from the pan. Let the potatoes cool until they are warm. When you can handle them easily, cut them 1/2 inch strips.
To prepare the sauce:
Use a small saucepan over medium heat to boil the wine. Cook it until half of it is gone. (Don't cook vinegar, if you are using that instead.) Add a bit of salt and pepper to the wine, and sprinkle all of this over the warm potatoes.
Combine the olive oil, shallots and scallions. Sprinkle these over the warm potatoes as well. Taste and adjust for salt and pepper preference.
This salad is best served warm, not cold or hot, so it works extremely well for picnics.
