Fresh Raspberry Spritzers
This is an excellent substitute for champagne. It fizzles and looks very pretty.
You will need:
Puree the raspberries and sugar in a food processor. Using a fine mesh sieve, pour the puree into a small bowl. With a rubber spatula, press down on the fruit to squeeze the juice into the bowl. Your goal is to get as much juice as possible, without getting glumps.
Keep this mixture sealed and cool until ready to serve. Then, place 3 tablespoons of the puree into each glass and about 1/2 cup sparking wine or sparkling water with a few ice cubes. Garnish with the lemon slice.
You probably made enough for seconds, so sip away!
