Seaside Lemon Chicken
Not only is this chicken very filling AND very tasty, but it is also very healthy. There is no frying in oils, just baking. Using bread crumbs it comes out nice and crispy, just as if it had been fried.
You will need:
Wash and dry the chicken. Set it aside. Put the bread crumbs, lemon zest, rosemary, thyme, garlic, shallot, cayenne pepper, salt and pepper onto a plate and mix them up.
Line a baking pan with aluminum foil for easy cleanup. Put a cooking rack inside the baking pan. Roll each piece of chicken in the seasoned bread crumb mixture and place them on the rack. Bake in pre-heated 425 degree oven for 45-50 minutes. Chicken is done when juice runs clear when you prick it. If using a food thermometer, it should read 180 degrees.
Remove from the oven. Cool and refrigerate until ready to go.
